Once bubbling, pour some salt and then the pasta you have chosen. Cook until \u2018al dente\u2019.<\/li>\n\n\n\n<li>&nbsp;In the meantime, crack the eggs&nbsp; and separate the yolks from the egg whites. In a bowl put the egg yolks and mix with the parmesan cheese until it is nice and creamy.<\/li>\n\n\n\n<li>Cook the guanciale in a pan until crispy. Set aside.<\/li>\n\n\n\n<li>When the pasta is ready pour it into the pan with the guanciale and mix well. You want the pasta to absorb the melted fat.<\/li>\n\n\n\n<li>Pour the pasta in the bowl with the eggs and stir. Fai bollire dell&#8217;acqua in una pentola capiente. Una volta che bolle, versa un po&#8217; di sale e poi la pasta scelta. Cuocere fino al dente.<\/p>\n\n\n\n<p>2. Nel frattempo, rompi le uova e separa i tuorli dagli albumi. In una ciotola metti i tuorli d&#8217;uovo, sbattili e mescolali con il parmigiano fino ad ottenere un composto bello cremoso.<\/p>\n\n\n\n<p>3. Cuocere il guanciale in padella finch\u00e9 diventa croccante. Mettere da parte.<\/p>\n\n\n\n<p>4. Quando la pasta \u00e8 pronta, versala nella padella con il guanciale e mescola bene cos\u00ec che la pasta assorba il grasso del guanciale.<\/p>\n\n\n\n<p>5. Versa la pasta nella ciotola con le uova e mescola. Aggiungi pepe e servilo velocemente, per non farla raffreddare.
